Spice Pillows Filled Cookie Recipe

1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/8 tsp ground cloves
1/2 cup butter or margarine
1/2 cup sugar
1 egg
1 tsp finely grated orange peel
1 tsp vanilla
mincemeat or thick jam for filling (I use raspberry or blueberry jam)

In a medium bowl, mix flour, baking soda, cinnamon, ginger, nutmeg, and cloves.
In a large mixing bowl, beat butter at medium speed for 30 seconds.
Add sugar and beat until fluffy.
Add eggs, orange peel and vanilla and beat well.
Gradually add in the flour mixture until well mixed.
Cover and chill about an hour, until the dough is easy to handle.
On a lightly floured board, roll the dough out to about 1/8 inch thick.
Cut into rounds with a 2 1/2 inch cookie cutter or glass.
Place 1/2 of the rounds onto an ungreased cookie sheet, about 1 inch apart.
Spoon about 2 tsp of filling onto center of rounds.
Top with remaining rounds.
Seal rounds by gently pushing along edges with fork tines. Be careful not to pierce the rounds.
Bake at 350 deg.F 8 to 10 minutes, or until the edges are firm and the bottoms are a light brown.
Allow to cool.
Store in tightly covered container.
Freezes well.
