Peanut Butter Cookies Recipe

˝ cup butter or shortening
˝ cup firmly packed brown sugar
˝ cup white sugar
1 egg
1 cup peanut butter (smooth is best)
˝ tsp. salt
˝ tsp. baking soda
˝ tsp. vanilla
1 to 1 ˝ cups flour. (use the greater amount if your peanut butter is heavy in oil)

Beat butter or shortening until soft.
Add brown sugar and white sugar gradually and blend until creamy.
Beat in egg, peanut butter, salt, baking soda and vanilla.
Mix well.
Add flour and mix well.
Roll dough into small balls, (about 1 inch) Can be bigger if you want big cookies.
Place on greased cookie sheet, about 2" apart.
Press down with floured fork to flatten.
Bake at 375 deg. F. about 10 -12 minutes, just until golden.
Store in airtight container.
Freezes well.
